How To Make Ratatouille Recipe
A classic French dish featuring an array of fresh vegetables cooked in a tomato-based sauce.

Ingredients
- 1 large eggplant, diced
- 2 zucchinis, diced
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1/4 cup olive oil
Instructions

Preheat oven to 375°F.

In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

Add diced eggplant, zucchini, and bell pepper to the skillet and cook for an additional 10 minutes.

Stir in canned tomatoes, dried basil, dried oregano, salt, and pepper. Transfer the vegetable mixture to a baking dish.

Bake in the oven for 30-35 minutes, or until vegetables are tender.
