How To Make Quinoa and Black Bean Salad

A healthy and flavorful salad made with quinoa, black beans, veggies and spices.

Serves:

Ingredients

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and let it cool.

  2. In a large bowl, mix cooked quinoa, black beans, red bell pepper, red onion, and cilantro.

  3. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.

  4. Pour the dressing over the quinoa mixture and toss.

  5. Serve chilled.
