Delicious and savory BBQ pulled jackfruit tacos, perfect for vegans or those who love to experiment with new flavors.

Ingredients

  • 2 cans of jackfruit, drained and rinsed
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1/2 cup of BBQ sauce
  • 1 tsp of smoked paprika
  • 1/2 tsp of cumin
  • Salt and pepper to taste
  • Corn tortillas
  • Toppings: shredded lettuce, diced tomatoes, sliced avocado, vegan sour cream, cilantro

Instructions

  1. In a large pan, heat olive oil over medium-high heat. Add diced onion and garlic and sauté for 2-3 minutes, until onion is translucent.

  2. Add drained jackfruit to the pan and cook for 5 minutes, stirring occasionally.

  3. Add BBQ sauce, smoked paprika, cumin, salt, and pepper to the pan with jackfruit. Mix well and let simmer for 10-15 minutes.

  4. Warm up corn tortillas in a separate pan or in the oven.

  5. Assemble tacos with jackfruit mixture and desired toppings.
