Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 bell pepper, chopped
  • 1 cucumber, chopped
  • 1/2 red onion, chopped
  • 1/2 cup kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a pot, bring quinoa and water to a boil. Cover and simmer for 15-20 minutes until water is absorbed and quinoa is tender.

  2. In a large bowl, whisk together lemon juice, olive oil, salt, and black pepper.

  3. Add cooked quinoa, bell pepper, cucumber, red onion, olives, feta cheese, and parsley to the bowl. Mix well.

  4. Chill salad in the fridge for at least 1 hour before serving.
