How To Make Coconut Curry Lentil Soup
A warm and hearty soup filled with lentils, spices and coconut milk. Perfect for a cozy night in!
Serves:
Ingredients
- 1 cup red lentils
- 1 tbsp coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1/2 tsp ground ginger
- 1/2 tsp ground turmeric
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk
- Salt and pepper, to taste
- Cilantro, for garnish
Instructions

Rinse lentils and set aside.

Heat coconut oil in a large pot over medium heat. Add onion and garlic and sauté for 5 minutes or until softened.

Add curry powder, cumin, ginger and turmeric and stir until fragrant.

Add lentils, broth and coconut milk to the pot and bring to a boil. Reduce heat to low and simmer for 20-25 minutes or until lentils are tender.

Season with salt and pepper to taste.

Serve hot and garnish with fresh cilantro.
