How To Make Coconut Curry Lentil Soup

A warm and hearty soup filled with lentils, spices and coconut milk. Perfect for a cozy night in!

Ingredients

  • 1 cup red lentils
  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/2 tsp ground turmeric
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • Salt and pepper, to taste
  • Cilantro, for garnish

Instructions

  1. Rinse lentils and set aside.

  2. Heat coconut oil in a large pot over medium heat. Add onion and garlic and sauté for 5 minutes or until softened.

  3. Add curry powder, cumin, ginger and turmeric and stir until fragrant.

  4. Add lentils, broth and coconut milk to the pot and bring to a boil. Reduce heat to low and simmer for 20-25 minutes or until lentils are tender.

  5. Season with salt and pepper to taste.

  6. Serve hot and garnish with fresh cilantro.
