Flavorful stuffed bell peppers filled with seasoned lentils, rice, and vegetables.

Ingredients

  • 4 bell peppers, halved and seeded
  • 1 cup cooked brown rice
  • 1 cup cooked lentils
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 carrot, grated
  • 1 celery stalk, diced
  • 1 can diced tomatoes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened.

  3. Add carrot and celery and cook for 2-3 minutes.

  4. Add cooked rice, lentils, canned tomatoes, and seasonings. Stir to combine.

  5. Fill bell pepper halves with lentil mixture and place in a baking dish.

  6. Cover the dish with aluminum foil and bake for 30 minutes.

  7. Remove the foil and bake for an additional 15-20 minutes.

  8. Serve hot and enjoy!
