How To Make Vegan Stuffed Bell Peppers Recipe
Flavorful stuffed bell peppers filled with seasoned lentils, rice, and vegetables.

Ingredients
- 4 bell peppers, halved and seeded
- 1 cup cooked brown rice
- 1 cup cooked lentils
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, grated
- 1 celery stalk, diced
- 1 can diced tomatoes
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and pepper, to taste
Instructions

Preheat oven to 375°F.

In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened.

Add carrot and celery and cook for 2-3 minutes.

Add cooked rice, lentils, canned tomatoes, and seasonings. Stir to combine.

Fill bell pepper halves with lentil mixture and place in a baking dish.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and bake for an additional 15-20 minutes.
