Ingredients

  • 2 ripe mangoes, diced
  • 1 red bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 cucumber, sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped roasted peanuts
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 small red chili, minced
  • Salt, to taste

Instructions

  1. In a large bowl, combine the mangoes, bell pepper, red onion, cucumber, cilantro, and mint.

  2. In a small bowl, whisk together the fish sauce, lime juice, honey, red chili, and salt until well combined.

  3. Pour the dressing over the salad and toss gently to combine.

  4. Sprinkle with roasted peanuts and serve immediately.
