- 2 green mangoes, peeled and julienned
- 250g prawns, peeled and deveined
- 1 red chili, thinly sliced
- 1 small red onion, thinly sliced
- 1/4 cup cilantro leaves
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1/4 cup peanuts, crushed
- Salt, to taste
Instructions

In a large bowl, combine the green mangoes, red chili, red onion, and cilantro leaves.

In a separate bowl, whisk together the fish sauce, lime juice, brown sugar, and salt to make the dressing.

Heat a pan over medium heat and cook the prawns for 2-3 minutes on each side until cooked through. Remove from heat.

Add the cooked prawns to the bowl with the green mango mixture.

Pour the dressing over the salad and toss to combine.

Sprinkle crushed peanuts over the top and serve immediately.
