How To Make Easter Leftover Potato and Ham Croquettes Recipe

A delicious and crispy way to use up your leftover Easter ham and potatoes.

Ingredients

  • 2 cups mashed potatoes
  • 1 cup ham, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated cheese
  • 1/4 cup chopped parsley
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 egg, beaten
  • 1 cup all-purpose flour
  • 1 cup vegetable oil

Instructions

  1. In a large mixing bowl, combine mashed potatoes, ham, breadcrumbs, cheese, parsley, garlic powder, onion powder, salt and pepper.

  2. Shape mixture into 12 croquettes.

  3. Dip each croquette into the beaten egg, then coat with flour.

  4. Heat oil in a large pan over medium-high heat until hot.

  5. Fry croquettes until golden brown on all sides.

  6. Drain on paper towels and serve hot.
