Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 cups cooked ham, diced
  • 3 cups cooked potatoes, diced
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 4 eggs

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add diced onion and minced garlic and sauté until softened.

  3. Add in diced ham and potatoes and stir well to combine.

  4. Sprinkle the mixture with paprika, salt, and pepper to taste.

  5. Sauté the mixture until it is heated through and the potatoes are crispy on the outside.

  6. While the hash is cooking, fry 4 eggs in a separate skillet.

  7. Divide the hash evenly between 4 plates and top each plate with a fried egg.

  8. Serve and enjoy!
