How To Make Scottish Stovies

Ingredients
- 4 large potatoes, peeled and sliced
- 1 large onion, thinly sliced
- 1 lb leftover roast beef, shredded
- 2 cups beef stock
- 1 tablespoon butter
- Salt and pepper, to taste
Instructions

In a large pot, melt the butter over medium heat. Add the onions and cook until softened, about 5 minutes.

Add the sliced potatoes and shredded roast beef to the pot. Season with salt and pepper.

Pour in the beef stock, making sure it covers the potatoes and beef. Bring to a simmer.

Reduce the heat to low and cover the pot. Cook for 1 hour, stirring occasionally, until the potatoes are tender and the flavors have melded together.

Remove the lid and increase the heat to medium-high. Cook for an additional 30 minutes, stirring occasionally, until the stovies have thickened and the top is golden and crispy.

Serve hot with crusty bread or pickled onions.
