Ingredients

  • 4 large potatoes, peeled and sliced
  • 1 large onion, thinly sliced
  • 1 pound stewing beef, cubed
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Chicken or beef stock, enough to cover the ingredients

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until softened.

  2. Add the cubed beef to the pot and cook until browned on all sides. Season with salt and pepper.

  3. Add the sliced potatoes to the pot and pour enough stock to cover the ingredients. Bring to a boil.

  4. Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the potatoes are soft and the flavors are well combined.

  5. Stir occasionally to prevent sticking and add more stock if needed.

  6. Serve hot with crusty bread or oatcakes.
