Ingredients

  • 3 oranges
  • 1 lemon
  • 2 cups dark muscovado sugar
  • 1/4 cup whisky
  • 1/2 cup water

Instructions

  1. Start by washing the oranges and lemon thoroughly. Cut them in half and juice them, saving the juice in a separate bowl.

  2. Using a sharp knife, slice the orange and lemon peels into thin strips, removing any excess pith.

  3. In a large saucepan, combine the sliced peels, orange and lemon juice, muscovado sugar, whisky, and water.

  4. Bring the mixture to a boil over medium heat, stirring constantly until the sugar has dissolved.

  5. Once the sugar has dissolved, reduce the heat to low and let it simmer for around 2 hours or until the mixture thickens and the peels become translucent. Stir occasionally to prevent sticking.

  6. Once the marmalade has reached the desired consistency, remove the saucepan from the heat and let it cool slightly.

  7. Transfer the marmalade to sterilized jars and seal them tightly. Allow the marmalade to cool completely before refrigerating.
