How To Make Pumpkin & Bacon Soup

Serves:

Ingredients

  • 1 small pumpkin, peeled and diced
  • 6 slices of bacon, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.

  2. In the same pot, add the onion and garlic. Cook until the onion is translucent.

  3. Add the diced pumpkin and cook for 5 minutes, stirring occasionally.

  4. Pour in the broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the pumpkin is tender.

  5. Using an immersion blender or regular blender, puree the soup until smooth.

  6. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

  7. Serve the soup hot, topped with crispy bacon and chopped parsley.
