How To Make Creamy Fish & Leek Pie

Ingredients
- 300g white fish fillets
- 2 leeks, sliced
- 2 cloves of garlic, minced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 500ml milk
- 100g cheddar cheese, grated
- Salt and pepper to taste
- 1 sheet of puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 180°C (350°F).

In a large pan, melt the butter over medium heat. Add the leeks and garlic and cook until softened.

Add the flour to the pan and stir until well combined. Gradually whisk in the milk until smooth.

Bring the mixture to a simmer and cook for 2-3 minutes, or until thickened. Stir in the grated cheese until melted and season with salt and pepper.

Place the fish fillets in an ovenproof dish and pour the creamy leek sauce over them.

Roll out the puff pastry sheet to fit the top of the dish and place it over the fish and sauce. Brush with beaten egg.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the fish is cooked through.
