How To Make Zucchini Ratatouille

Sauteed with bell peppers and onions, this zucchini ratatouille is a deconstructed version of the French dish in an oregano-spiced sauce.

Ingredients

  • 1tbspolive oil
  • cupsonion,chopped
  • 1cuppieces sweet bell pepper,(1 inch)
  • 4cupspieces zucchini,(1 inch)
  • cupswater
  • 1cantomato paste,(6 oz)
  • 4clovesgarlic,crushed
  • ½tsporegano,dried
  • salt and ground black pepper,to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Saute onion and bell pepper for 5 to 10 minutes until softened.

  2. Add zucchini, water, tomato paste, garlic, and oregano.

  3. Cover skillet and simmer over medium-low heat for about 20 minutes, stirring frequently until zucchini is softened and transparent.
