How To Make Lentil Stew Recipe
This hearty stew is made with lentils, vegetables, and warm spices, perfect for a cozy meal on a cold day.

Ingredients
- 1 cup of dried lentils
- 4 cups of vegetable broth
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 tsp of cumin
- 1 tsp of smoked paprika
- Salt and pepper, to taste
- 2 tbsp of olive oil
- Fresh parsley, chopped, for garnish (optional)
Instructions

Rinse the lentils and set aside.

In a large pot, heat the olive oil over medium heat. Add onions, garlic, carrots, and celery, and cook until the vegetables are softened.

Add cumin, smoked paprika, salt, and pepper, and stir.

Add vegetable broth and lentils, bring to a boil, then reduce heat to low and simmer for 30-40 minutes, or until lentils are tender.

Serve hot, topped with fresh parsley if desired.
