How To Make Lentil and Sweet Potato Chili Recipe
A hearty, nutritious chili that is perfect for cold evenings.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 sweet potato, peeled and diced
- 1 red bell pepper, diced
- 1 jalapeño pepper, seeded and diced
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) black beans, drained and rinsed
- 1 can (14 oz) lentils, rinsed and drained
- 1 cup vegetable broth
- 1/4 cup chopped fresh cilantro
- Avocado, sliced (for garnish)
Instructions

In a large pot, heat olive oil over medium heat. Add onion and garlic, and cook for 3-4 minutes or until softened.

Add sweet potato, red bell pepper, jalapeño pepper, chili powder, cumin, cayenne pepper, and salt, and cook for 5-7 minutes or until vegetables are tender.

Add diced tomatoes, black beans, lentils, and vegetable broth, and bring to a simmer.

Reduce heat to low, cover, and cook for 30-35 minutes or until sweet potatoes are soft.

Stir in cilantro and serve hot, garnished with avocado.
