Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 sweet potato, peeled and diced
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and diced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 can (14 oz) lentils, rinsed and drained
  • 1 cup vegetable broth
  • 1/4 cup chopped fresh cilantro
  • Avocado, sliced (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and cook for 3-4 minutes or until softened.

  2. Add sweet potato, red bell pepper, jalapeño pepper, chili powder, cumin, cayenne pepper, and salt, and cook for 5-7 minutes or until vegetables are tender.

  3. Add diced tomatoes, black beans, lentils, and vegetable broth, and bring to a simmer.

  4. Reduce heat to low, cover, and cook for 30-35 minutes or until sweet potatoes are soft.

  5. Stir in cilantro and serve hot, garnished with avocado.
