How To Make Lentil Shepherd’s Pie Recipe
A warm and comforting dish made with lentils and topped with mashed potatoes.
Serves:
Ingredients
- 1 cup of dried green or brown lentils
- 4 medium potatoes, peeled and diced
- 2 tbsp of butter
- 1 onion, diced
- 2 carrots, diced
- 2 cloves of garlic, minced
- 1 cup of vegetable broth
- Salt and pepper to taste
Instructions

Preheat oven to 375°F.

Cook lentils according to package instructions.

In a separate pot, boil potatoes until soft.

Drain potatoes and mash them with butter. Set aside.

In a skillet, sauté onion, carrots, and garlic until tender.

Add cooked lentils and broth to skillet. Season with salt and pepper.

Pour mixture into a baking dish and top with mashed potatoes.

Use a fork to create peaks on the mashed potatoes.

Bake in oven for 30 minutes or until top is golden brown.
