How To Make Lentil Shepherd’s Pie Recipe

A warm and comforting dish made with lentils and topped with mashed potatoes.

Ingredients

  • 1 cup of dried green or brown lentils
  • 4 medium potatoes, peeled and diced
  • 2 tbsp of butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves of garlic, minced
  • 1 cup of vegetable broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. Cook lentils according to package instructions.

  3. In a separate pot, boil potatoes until soft.

  4. Drain potatoes and mash them with butter. Set aside.

  5. In a skillet, sauté onion, carrots, and garlic until tender.

  6. Add cooked lentils and broth to skillet. Season with salt and pepper.

  7. Pour mixture into a baking dish and top with mashed potatoes.

  8. Use a fork to create peaks on the mashed potatoes.

  9. Bake in oven for 30 minutes or until top is golden brown.
