How To Make Lentil Salad Recipe

Serves:

Ingredients

  • 1 cup of dried green lentils
  • 2 cups of water
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 English cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup of olive oil
  • 1/4 cup of balsamic vinegar
  • 1 tsp of honey
  • Salt and pepper to taste
  • 1/4 cup of chopped fresh parsley

Instructions

  1. Rinse lentils and place in a pot with two cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes or until tender. Drain and rinse with cold water.

  2. In a large bowl, combine cooked lentils, red and yellow bell pepper, cucumber, and red onion.

  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.

  4. Pour the dressing over the lentil mixture and toss to coat.

  5. Top with chopped fresh parsley before serving.
