How To Make Lentil and Sausage Casserole Recipe
A hearty casserole featuring lentils and sausage in a flavorful tomato sauce.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 sausages, sliced
- 1 can diced tomatoes
- 1 cup dried lentils
- 2 cups vegetable broth
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley, for garnish
Instructions

Preheat oven to 375°F.

Heat olive oil in a large skillet over medium-high heat. Add onion and garlic and sauté until softened.

Add sliced sausages and cook until lightly browned.

Add diced tomatoes, lentils, broth, oregano, salt, and pepper to the skillet and stir to combine.

Transfer mixture to a casserole dish and bake for 45 minutes, or until lentils are tender and sauce is thickened.

Garnish with parsley before serving.
