Ingredients

  • 1 medium jicama, peeled and julienned
  • 1 large ripe mango, peeled and diced
  • 2 small red onions, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • salt and pepper, to taste

Instructions

  1. In a large bowl, combine the jicama, mango, red onions, red bell pepper, and cilantro.

  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

  3. Pour dressing over salad and toss to combine.

  4. Serve chilled.
