How To Make Jicama and Chicken Stir-Fry

A savory stir-fry with crispy jicama and tender chicken that’s incredibly flavorful and easy to make.

Ingredients

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1 small jicama, peeled and julienned
  • 1 red bell pepper, julienned
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil, divided
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together soy sauce, cornstarch, honey, and sesame oil.

  2. In a large wok or skillet, heat 1 tablespoon of vegetable oil over high heat until hot.

  3. Add chicken and stir-fry for 5-6 minutes until cooked through and lightly browned. Remove from wok and set aside.

  4. In the same wok, heat another tablespoon of vegetable oil over high heat.

  5. Add jicama, bell pepper, onion, and garlic. Stir-fry for 3-4 minutes until crisp-tender.

  6. Add chicken back into the wok and pour in the soy sauce mixture.

  7. Stir-fry for another 2-3 minutes until the sauce thickens and everything is well coated.

  8. Season with salt and pepper to taste.

  9. Serve hot and enjoy!
