Ingredients

  • 1 Jicama, peeled and chopped into small pieces
  • 1 cup of Edamame, shelled
  • 1/2 red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 2 limes, juiced
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. In a large bowl, combine the jicama, edamame, red onion, and cilantro.

  2. In a small bowl, whisk together the lime juice, honey, salt, and black pepper.

  3. Pour the dressing over the salad and toss to coat.

  4. Serve chilled.
