Ingredients

  • 1 small jicama, peeled and julienned
  • 1 large cucumber, peeled and julienned
  • 1 red bell pepper, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 2 tbsp honey
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine jicama, cucumber, red bell pepper, and cilantro.

  2. In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper.

  3. Pour dressing over the salad and toss to combine.

  4. Serve chilled.
