How To Make Sticky Cod with Celeriac & Parsley Mash

Ingredients
- 4 cod fillets
- 4 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp olive oil
- 1 celeriac, peeled and diced
- 4 potatoes, peeled and diced
- 1/2 cup chopped fresh parsley
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, combine the soy sauce, honey, and olive oil. Brush the mixture onto both sides of the cod fillets.

Place the coated cod fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the cod is cooked through and the glaze is sticky.

While the cod is baking, place the diced celeriac and potatoes in a large pot of salted boiling water. Cook for 10-12 minutes, or until tender.

Drain the celeriac and potatoes and return them to the pot. Mash them together until smooth. Stir in the chopped parsley and season with salt and pepper.

Serve the sticky cod fillets on top of the celeriac and parsley mash.
