Ingredients

  • 1 pound of carrots, peeled and trimmed
  • 2 tablespoons of honey
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, combine the honey, olive oil, salt, and black pepper.

  3. Add the carrots to the bowl and toss them in the honey mixture until they are well coated.

  4. Arrange the carrots in a single layer on a baking sheet.

  5. Roast the carrots in the preheated oven for 25 minutes or until they are tender and lightly caramelized, stirring once halfway through.

  6. Remove the carrots from the oven and sprinkle them with fresh parsley before serving.
