- 1 pound of carrots, peeled and sliced
- 2 tangerines, juiced and zested
- 2 tablespoons of honey
- 1 tablespoon of olive oil
- Salt and pepper to taste

Preheat oven to 400°F.

In a bowl, mix together tangerine juice, zest, honey, olive oil, salt, and pepper.

Add sliced carrots to the bowl and toss until evenly coated.

Spread carrots out on a baking sheet in a single layer.
