Sweet and nutty roasted carrots with honey and seeds make a perfect side dish.

Ingredients

  • 1 pound of carrots, peeled and trimmed
  • 2 tbsp of honey
  • 2 tbsp of olive oil
  • 2 tbsp of pumpkin seeds
  • 2 tbsp of sunflower seeds
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.

  2. In a bowl, mix together honey, olive oil, salt, and pepper.

  3. Toss the carrots in the mixture until they are coated, then spread them evenly on a baking sheet.

  4. Roast carrots for 20 minutes.

  5. Sprinkle pumpkin and sunflower seeds over the carrots and roast for an additional 10 minutes, until they are golden brown.

  6. Serve and enjoy!
