How To Make Green Pea and Mint Pesto

A delicious and refreshing pesto made with green peas and mint.

Ingredients

  • 2 cups of frozen green peas, thawed
  • 1/2 cup of fresh mint leaves, packed
  • 1/4 cup of grated Parmesan cheese
  • 2 garlic cloves
  • 1/4 cup of extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine the green peas, mint leaves, Parmesan cheese, garlic, salt, and pepper.

  2. Pulse until smooth, scraping down the sides as needed.

  3. With the food processor running, slowly pour in the olive oil until the pesto is smooth and creamy.

  4. Serve the pesto over pasta, crostini, or grilled meats.
