A flavorful vegan and gluten-free dish with tender cauliflower and sweet green peas simmered in a spiced coconut milk gravy.

Ingredients

  • 1 head cauliflower, chopped
  • 2 cups green peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger paste
  • 1 tbsp curry powder
  • 1 can coconut milk
  • 1 tbsp vegetable oil
  • salt, to taste
  • cilantro, for garnish

Instructions

  1. Heat oil in a pan and sauté onions until translucent.

  2. Add garlic, ginger paste, and curry powder. Cook for 1-2 minutes.

  3. Add in cauliflower and green peas. Stir to coat with spices.

  4. Pour in coconut milk and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until cauliflower is tender.

  5. Season with salt, to taste.

  6. Garnish with cilantro and serve hot with rice or naan bread.
