Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup Arborio rice
  • ½ cup dry white wine
  • 4 cups vegetable broth
  • 1 cup frozen green peas
  • 1 lemon, zest and juice
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large saucepan over medium heat.

  2. Add the onion and garlic and sauté until softened.

  3. Add the Arborio rice and stir until coated with oil.

  4. Deglaze with white wine and stir until absorbed.

  5. Gradually add the vegetable broth, stirring frequently until the rice is tender and the mixture is creamy.

  6. Add the frozen green peas and lemon zest and juice.

  7. Stir in Parmesan cheese and season with salt and pepper to taste.
