Ingredients

  • 1 lb green beans, trimmed
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tbsp sesame seeds
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until they are bright green and crisp-tender. Drain and set aside.

  2. Heat vegetable oil in a large skillet over medium-high heat. Add mushrooms and cook until they are tender and lightly browned, about 5-6 minutes.

  3. Add garlic to the skillet and cook for another minute until fragrant.

  4. In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, salt, and black pepper.

  5. Add the cooked green beans to the skillet with mushrooms. Pour the soy dressing over the vegetables and toss to coat.

  6. Cook for an additional 2-3 minutes, until the green beans are heated through and well coated with the dressing.

  7. Sprinkle sesame seeds over the dish and stir to combine.

  8. Remove from heat and serve hot.
