How To Make Green Beans & Radishes with Shallot Dressing

- 1 lb green beans, trimmed
- 8 radishes, thinly sliced
- 1 shallot, finely chopped
- 2 tablespoons white wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until crisp-tender.

Drain the green beans and immediately plunge them into a bowl of ice water to stop the cooking process.

In a small bowl, whisk together the shallot, white wine vinegar, olive oil, Dijon mustard, salt, and pepper to make the dressing.

Place the drained green beans and sliced radishes in a large serving bowl.

Pour the dressing over the vegetables and toss to coat evenly.

Garnish with fresh parsley and serve chilled.
