Ingredients

  • 1 lb green beans, trimmed
  • 8 radishes, thinly sliced
  • 1 shallot, finely chopped
  • 2 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until crisp-tender.

  2. Drain the green beans and immediately plunge them into a bowl of ice water to stop the cooking process.

  3. In a small bowl, whisk together the shallot, white wine vinegar, olive oil, Dijon mustard, salt, and pepper to make the dressing.

  4. Place the drained green beans and sliced radishes in a large serving bowl.

  5. Pour the dressing over the vegetables and toss to coat evenly.

  6. Garnish with fresh parsley and serve chilled.
