Delicious Asian-inspired salad with delicate enoki mushrooms, flavorful sesame noodles, and a tangy dressing.

Ingredients

  • 8 oz. enoki mushrooms, trimmed and separated
  • 8 oz. spaghetti noodles
  • 1/4 cup soy sauce
  • 2 tbsp. rice vinegar
  • 2 tbsp. sesame oil
  • 1 tbsp. honey
  • 1 garlic clove, minced
  • 1/2 tsp. red pepper flakes
  • 2 green onions, thinly sliced
  • 2 tbsp. sesame seeds

Instructions

  1. Cook spaghetti noodles according to package instructions until al dente. Drain and rinse under cold water.

  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, and red pepper flakes.

  3. In a large bowl, toss together cooked noodles, enoki mushrooms, and green onions.

  4. Pour dressing over salad and toss to combine.

  5. Sprinkle sesame seeds on top before serving.
