Ingredients

  • 4 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Scrub the sweet potatoes and pierce them with a fork a few times. Place them on a baking sheet and bake for 45 minutes, or until tender.

  3. Remove the sweet potatoes from the oven and let them cool slightly. Peel off the skin and transfer the flesh to a large bowl.

  4. In a small bowl, mix together the olive oil, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper.

  5. Pour the spice mixture over the sweet potatoes and mash them until smooth and well combined.

  6. Serve the blackened sweet potato mash hot, garnished with chopped fresh cilantro if desired.
