Ingredients
- 1 lb white fish fillets, cut into chunks
- 1 onion, chopped
- 4 cloves garlic, roasted and minced
- 1 red bell pepper, diced
- 1 can diced tomatoes (14 oz)
- 2 cups fish or vegetable broth
- 1/2 cup white wine
- 1/2 tsp saffron threads
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions

In a large pot or Dutch oven, heat olive oil over medium heat. Add onions and sauté until softened.

Add roasted garlic, red bell pepper, saffron threads, paprika, and red pepper flakes. Cook for 1-2 minutes, stirring occasionally.

Pour in white wine and let it simmer until it reduces by half.

Add diced tomatoes, fish or vegetable broth, and season with salt and pepper. Bring to a simmer.

Gently add fish chunks to the pot and cook for 10-12 minutes or until the fish is cooked through and flakes easily.

Stir in chopped parsley and adjust the seasoning if needed.

Serve hot with crusty bread or over steamed rice.
