Ingredients

  • 8 slices of whole wheat bread
  • 1 cup grated carrots
  • 1/2 cup raisins
  • 4 tablespoons mayonnaise
  • Salt and pepper to taste
  • Lettuce leaves (optional)

Instructions

  1. In a bowl, mix together the grated carrots and raisins.

  2. Spread mayonnaise on one side of each bread slice.

  3. Divide the carrot and raisin mixture equally and spread it on 4 bread slices.

  4. Sprinkle salt and pepper over the mixture.

  5. Top with lettuce leaves, if desired, and cover with the remaining bread slices.
