Instructions

  1. Using a mandoline or a sharp knife, thinly slice the courgettes lengthwise. Arrange the slices on a serving plate.

  2. In a small bowl, squeeze the juice of the lemon. Add the olive oil, salt, and pepper. Whisk until well combined.

  3. Drizzle the dressing over the courgette slices, ensuring they are evenly coated.

  4. Scatter fresh basil leaves on top and sprinkle with shaved Parmesan cheese.
