Preparation: 20 minutes
Cooking: 3 hours
Total: 3 hours and 20 minutes

Serves:

Ingredients

  • 1 whole turkey (about 12 pounds)
  • 1 teaspoon saffron threads
  • 4 tablespoons butter, melted
  • Salt and pepper to taste
  • 1 onion, quartered
  • 4 cloves of garlic, minced
  • 1 lemon, halved
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. Rinse the turkey and pat it dry with paper towels.

  3. In a small bowl, mix the saffron threads with melted butter. Season the turkey with salt and pepper, then brush the saffron butter mixture all over the bird.

  4. Stuff the turkey cavity with onion quarters, minced garlic, and lemon halves.

  5. Place the turkey on a rack in a roasting pan. Pour the chicken broth into the pan to prevent the turkey from drying out.

  7. Baste the turkey with the pan juices every 30 minutes.

  8. Remove the turkey from the oven and let it rest for 20 minutes before carving.

  9. Serve the saffron roast turkey with your favorite side dishes.
