How To Make Big Bear Stew

Ingredients
- 1.5 pounds of beef stew meat, cubed
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- 2 bay leaves
- 4 cups of beef broth
- 1 cup of red wine
- 1 can (14.5 ounces) of diced tomatoes
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions

In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the beef from the pot and set aside.

In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are tender.

Add the dried thyme, dried rosemary, bay leaves, beef broth, red wine, and diced tomatoes to the pot. Stir to combine.

Return the beef to the pot and bring the stew to a boil. Reduce heat to low, cover, and simmer for 2 hours, or until the beef is tender.

Remove the bay leaves from the stew and season with salt and pepper to taste.

Serve the Big Bear Stew hot, garnished with chopped parsley.
