
How To Make Fried Eggplant Parmesan Recipe

Ingredients
- 2 large eggplants, sliced into 1/2 inch rounds
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh basil
- Salt and pepper, to taste
- Olive oil, for frying
Instructions

Preheat the oven to 400°F.

In a shallow dish, combine breadcrumbs and Parmesan cheese. Season with salt and pepper.

Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture.

Heat olive oil in a large skillet over medium heat.

Fry the eggplant slices in batches until golden brown and crispy on both sides. Transfer to a paper towel-lined plate to drain excess oil.

Spread marinara sauce in the bottom of a baking dish. Arrange half of the fried eggplant slices in a single layer on top.

Sprinkle with half of the shredded mozzarella cheese and chopped basil. Repeat with another layer of eggplant, sauce, mozzarella, and basil.

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
