Ingredients

  • 4 large tomatoes
  • 1 cup fresh basil leaves
  • 1/4 cup granulated sugar
  • Juice of 1 lemon

Instructions

  1. Cut the tomatoes into quarters and remove the seeds and core. Place the tomato quarters in a blender.

  2. Add the fresh basil leaves, granulated sugar, and lemon juice to the blender with the tomatoes.

  3. Blend until smooth and well combined.

  4. Pour the mixture into a shallow dish or pan, and place in the freezer.

  5. Every 30 minutes, remove the dish from the freezer and use a fork to scrape the mixture, creating a granita texture.

  6. Repeat this process for about 2 hours, or until the granita has a slushy consistency.

  7. Serve the tomato & basil granita in chilled bowls or glasses and garnish with more fresh basil leaves if desired.
