  • 4 ripe mangoes, peeled and pitted
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 lime, juiced
  • Mint leaves, for garnish

Instructions

  1. In a blender, puree the mangoes until smooth.

  2. Add the sugar, vanilla extract, and lime juice to the blender.

  3. Blend until the sugar is dissolved.

  4. Pour the mixture into a shallow baking dish and place it in the freezer.

  5. After 45 minutes, use a fork to scrape the mixture to create ice crystals.

  6. Repeat the scraping process every 30 minutes for about 3 hours, or until the granita is firm and icy.

  7. Serve the Mango & Vanilla Granita in chilled bowls, garnished with mint leaves.
