How To Make Mushroom Noodle Soup
A warm and comforting soup with earthy mushrooms and tender noodles.
Serves:
Ingredients
- 8 oz. of egg noodles
- 1 tbsp. of oil
- 1 small onion, diced
- 3 cloves of garlic, minced
- 8 oz. of sliced mushrooms
- 6 cups of chicken or vegetable broth
- 1 tbsp. of soy sauce
- 1/4 tsp. of black pepper
- Salt to taste
- 2 green onions, thinly sliced
Instructions

Cook the egg noodles according to package instructions, then drain and set aside.

In a large pot, heat the oil over medium-high heat. Add the onion and garlic, and sauté for 2-3 minutes until fragrant.

Add the sliced mushrooms, and cook for 5-7 minutes until they start to brown and release their liquid.

Pour in the chicken or vegetable broth, and bring to a boil. Reduce heat to low and simmer for 5-10 minutes.

Add the cooked noodles, soy sauce, black pepper, and salt to taste. Stir well.

Cook for 2-3 minutes until the noodles are heated through.

Ladle the soup into bowls, and top with thinly sliced green onions.
