How To Make Chinese Tofu and Mushroom Noodle Soup Recipe

A comforting and flavorful noodle soup with soft tofu and earthy mushrooms.

Serves:

Ingredients

  • 6 cups of vegetable stock
  • 2 cups of sliced mushrooms
  • 1 block of soft tofu, cubed
  • 2 tbsp of soy sauce
  • 1 tbsp of grated ginger
  • 2 cloves of minced garlic
  • 1 pack of noodles, cooked according to package instructions
  • 2 stalks of green onions, chopped
  • Salt and pepper, to taste

Instructions

  1. In a pot, heat the vegetable stock and add in the mushrooms, soy sauce, ginger, and garlic. Let it simmer for 10 minutes.

  2. Add in the cubed tofu and let it cook for another 5 minutes.

  3. Season with salt and pepper, to taste.

  4. Pour the soup over cooked noodles and top with chopped green onions.
