How To Make Turmeric and Ginger Carrot Soup

A creamy and warming soup with a slight kick of ginger and turmeric.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tbsp turmeric powder
  • 4 cups carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup coconut milk
  • Fresh cilantro, chopped (optional)

Instructions

  1. Heat olive oil in a pot over medium heat.

  2. Add onions, garlic, and ginger. Sauté for 5 minutes until onions are translucent.

  3. Add turmeric and stir well, cook for 1-2 minutes.

  4. Add carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until carrots are tender.

  5. Using an immersion blender, blend the soup until smooth.

  6. Add salt, black pepper, and coconut milk. Stir well and cook for another 5 minutes.

  7. Serve hot with fresh cilantro as garnish.
