How To Make Turmeric and Ginger Carrot Soup
A creamy and warming soup with a slight kick of ginger and turmeric.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp turmeric powder
- 4 cups carrots, peeled and chopped
- 4 cups vegetable broth
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 cup coconut milk
- Fresh cilantro, chopped (optional)
Instructions

Heat olive oil in a pot over medium heat.

Add onions, garlic, and ginger. Sauté for 5 minutes until onions are translucent.

Add turmeric and stir well, cook for 1-2 minutes.

Add carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until carrots are tender.

Using an immersion blender, blend the soup until smooth.

Add salt, black pepper, and coconut milk. Stir well and cook for another 5 minutes.

Serve hot with fresh cilantro as garnish.
