Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 10 oz mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup barley
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat.

  2. Add onion and garlic. Sauté until the onion is translucent.

  3. Add mushrooms and sauté until they release their liquid and begin to brown.

  4. Add vegetable broth, barley, and thyme.

  5. Bring to a boil, then reduce heat and simmer for 45 minutes, or until barley is tender.

  6. Season with salt and pepper to taste.
