How To Make Broccoli and Cheddar Soup

Creamy and cheesy soup loaded with broccoli florets, perfect for a cozy meal.

  • 4 cups broccoli florets
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable stock
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup all-purpose flour
  • 2 tbsp butter
  • Salt and pepper, to taste


  1. In a large pot, melt butter over medium heat. Add onion and garlic and cook until onions are translucent.

  2. Add broccoli florets and vegetable stock to the pot and bring to a boil. Reduce heat to low, cover and simmer for 15-20 minutes until broccoli is soft.

  3. In a small bowl, mix flour and milk together until smooth. Slowly pour into the pot while stirring constantly.

  4. Add shredded cheddar cheese and continue stirring until cheese is melted and soup is thickened.

  5. Using a blender or immersion blender, blend soup until desired consistency is reached.

  6. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
