How To Make Tomato and Quinoa Soup Recipe
A hearty and healthy soup packed with protein and flavor.

Ingredients
- 1 cup quinoa
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes
- 4 cups vegetable broth
- 1 can (28 oz) diced tomatoes
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

Rinse the quinoa in a fine-mesh strainer under cold running water and set it aside.

Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrot, celery, basil, oregano, and red pepper flakes. Cook, stirring frequently, until the onion is translucent, about 5 minutes.

Add the quinoa, vegetable broth, and diced tomatoes and bring the soup to a boil. Reduce the heat and simmer for 25 minutes, or until the quinoa is cooked and the vegetables are tender.

Season the soup with salt and pepper, to taste. Garnish with fresh parsley.
